Sher Wagyu beef  is assessed for marbling and meat quality by independent graders accredited by Ausmeat. Marbling is graded on a scale of  0 - 9 with 9 being the highest in the Ausmeat grading system. Grade 9+ includes meat that would grade up to 11-12 in Japan.

Sher Wagyu is packaged into four labels.

Sher Wagyu Blue Label is Wagyu Fullblood 100% grades 9-9+.

Sher Wagyu Black, Silver & Red Labels are Crossbred Wagyu - primarily from Wagyu x Holstein F1 50% but also include Crossbred Wagyu F2 75% and Crossbred Wagyu F3 87%
